Vegan Sandwiches 2 ways

Two quick and easy sarmie fillings that are healthy, refreshing and perfect for a spring or summer lunch or to take along on a picnic.

Sandwich 1


2 slices whole grain seeded bread

1/2 a small avocado sliced

1/4 a tin of red kidney beans washed and drained

1 carrot thinly sliced

butter lettuce leaves

1/4 cup chopped red cabbage

1 tablespoon vegan cream cheese

Layer as follows:

bread, cream cheese, butter lettuce, kidney beans, carrot slices, avocado, butter lettuce, red cabbage, cream cheese, bread.

Sandwich 2


2 slices whole grain seeded bread⁣

1 tablespoon vegan mayo

a few red lettuce leaves ⁣

1/4 a cup chopped red cabbage ⁣

⁣ red bell pepper sliced ⁣

vegan cheese slice

1/2 a small avocado sliced⁣

Layer as follows:

bread, mayo, red lettuce , avocado slices, slice of cheese , red cabbage, bell pepper, mayo, bread. ⁣

I hope you enjoy these ! A sandwich is probably one of my lunch staples so I'm glad to be able to share two of my favourite combinations with you.
