VEGAN RASPBERRY LINZER COOKIES

A super fun and delicious recipe, I made these last week to add to my Christmas biscuit boxes and they are definitely a favourite. ⁣

 

MAKES: PREP TIME: COOK TIME:

24 cookies 45 minutes 15 minutes

 

FOR THE COOKIES:

1 cup of vegan butter

3/4 cup of icing sugar

a generous pinch of salt ⁣

1/2 tsp vanilla essence ⁣

2 cups of all-purpose flour ⁣

⁣FOR THE FILLING:

raspberry fruit jam

 

FOR THE COOKIES:

1. Preheat the oven to 180°c and line two baking trays. ⁣

2. In a mixing bowl with the paddle attachment beat the vegan butter, icing sugar, salt and vanilla together for 3 minutes. ⁣

3. Add the flour to the mixture until it just combines (a ball of dough should form) ⁣

4. Remove from the bowl and knead until a ball of dough forms. ⁣

5. Wrap and place in the fridge to rest for 30 minutes. ⁣

6. Once rested roll the dough out onto a floured surface and cut out the shapes (Both outside and inside circle) then place onto the baking tray. - make sure to leave 1/2 of the cookies whole (don’t cut a hole in them) as they are the bottom cookie.⁣

7. Keep repeating step 6 until there is no more dough left. ⁣

8. Bake for 10-15 minutes or until the cookies become golden at the edges. ⁣

9. Once baked remove from the oven and allow to cool. ⁣

10. Once cool dust some icing sugar over the top cookies (the ones with the holes in them) and spread a layer of raspberry jam over the bottom ones. ⁣

11. Sandwich the two cookies together and enjoy !
