vegan mac no cheese

cream, cheesy and gooey no cheese mac and cheese ! I know, it sounds crazy ! This recipe is made from whole foods, no cheese replacements and no artificial flavours.



THE RECIPE


The Ingredients:


2 medium potatoes

2 medium carrots

1/4 cup of water

2-3 tablespoons nutritional yeast - for a really cheesy flavour

1 tablespoon tahini

1 teaspoon salt

a bag of elbow pasta





Method:

  1. Chop the carrots and potatoes into smaller pieces and boil in a pot of water until soft. Remove from heat, drain and set aside.

  2. Bring another pot of water to a boil and cook as much elbow pasta as you want (I cooked around 1/4 of the packet) , once cooked and drain the water from the pot (leave the pasta in the pot)

  3. In a food processor or high speed blender add the carrots, potatoes, water, nutritional yeast, salt and tahini and blend until smooth.

  4. Add more salt or nutritional yeast to taste

  5. Pour the cheesy mixture over the pasta and stir

  6. Dish into a bowl and serve with more nutritional yeast on top (or you can sub vegan parmesan if you want to)
