GOOEY LAYERED COCONUT BROWNIES

RECIPES/SWEET TREATS/CHOCOLATE

A family favourite, I can guarantee you that these will not last very long in your house. They are perfect with a cup of hot chocolate or even a cheeky midnight snack.


 

MAKES: PREP TIME: COOK TIME:

12-15 brownies 25 minutes 25 minutes

 

FOR THE BROWNIE LAYER :

250g of dark chocolate

90 ml of canola oil ⁣

250g of caster sugar ⁣

160 ml of water ⁣

180g all purpose flour ⁣

1/2 cup of cocoa powder ⁣

Pinch of salt ⁣

FOR THE COCONUT LAYER:

300g of desiccated coconut ⁣

2 tins of vegan coconut condensed milk, I used the brand Natures Charm (200g tins) ⁣

FOR THE CHOCOLATE LAYER:

100g dark chocolate ⁣

2 tbsp coconut oil ⁣

 

MAKE THE BROWNIE:

1. Preheat the oven to 150°C and line a 20cm x 30cm baking tray ⁣

2. In a bowl melt together the dark chocolate and oil (either over simmering water or in the microwave)⁣

3. Once melted set aside to cool ⁣

4. In another a bowl combine the sugar and water and microwave until the sugar is dissolved (use 40 second intervals and stir in between) ⁣

5. Add the flour, cocoa powder and salt to the water sugar mixture and then add the melted chocolate ⁣

6. Mix until smooth and bake for 20-25 min⁣

7. Set aside to cool ⁣

MAKE THE COCONUT LAYER:

1. In a bowl combine the coconut and coconut condensed milk and mix until completely combined ⁣

2. Spread over the cooled brownie base ⁣

3. Place in the fridge while you prepare the chocolate layer ⁣

MAKE THE CHOCOLATE LAYER:

1. In a bowl melt the chocolate and coconut oil (either in the microwave or over simmering water in a pot) ⁣

2. Pour over the cooled coconut layer ⁣

3. Place in the freezer just until the chocolate sets (5-10 min) ⁣

 

Remove from the baking tray and slice into even squares

Store in an air tight container for up to 5 days
