These chunky chocolate brownies were a crowd-pleaser in my house and were devoured in a few days. With an easy to follow recipe and simple ingredients anyone can make these delicious brownies.
(makes around 12 brownies)
3/4 cup plant milk (I used unsweetened almond milk)
1 tablespoon apple cider vinegar
2 cups of cake flour (can also sub for gluten-free)
1/2 a cup cocoa powder
1 teaspoon baking powder
1 teaspoon salt
1 1/2 cups sugar
3/4 cup oil
1 teaspoon vanilla extract
1/2 cup of chopped hazelnuts or almonds
1 cup of vegan chocolate chips
For the icing I used 'Squillos' chocolate spread but any vegan chocolate spread or frosting would work too.
Preheat the oven to 180 degrees celsius (350 degrees F) and grease a square baking dish.
In a bowl add the apple cider vinegar to the plant milk, leave to stand for 5 minutes so that the milk can curdle.
In a separate bowl sift together the flour, cocoa powder, baking soda and salt.
Add the sugar, vanilla extract and oil to the plant milk mixture and mix well.
Add the wet ingredients to the dry ingredients and stir until smooth.
Add in the chocolate chips and chopped nuts and combine.
Bake in the oven 30-35 minutes (if you want them slightly softer inside bake for a shorter period of time)
Once baked transfer the baking dish to a wire rack and allow too cool.
When cooled remove from the dish and cut into rectangles (around 12).
Spread with a thick layer of vegan chocolate spread or icing and enjoy.
