I had some ripe bananas that I wasn't able to freeze so I finally gave into baking banana bread this quarantine but decided to add a spin to it, I made it chocolate.
1/4 cup coconut sugar
1/4 cup maple syrup
1/2 cup plant milk
1/4 cup oil
1 tsp vanilla extract
2 prepares “eggs” using flax seeds or egg replacer
1 1/4 cup mashed ripe bananas
1 1/2 cup flour
1 cup cocoa powder
1 tsp baking powder
1 tsp baking soda
Pinch of salt
1 cup vegan chocolate chips
Preheat the oven to 180°(350 degrees F) and spray a loaf tin.
In a bowl whisk together the sugar, milk, oil, eggs, vanilla and maple syrup.
Add in the mashed banana to the bowl and whisk again.
Sift the dry ingredients into the bowl (flour, baking powder, baking soda, cocoa powder and salt).
Add the chocolate chips and mix well to combine.
Pour the batter into the loaf tin and sprinkle with some chocolate chips on top or top with banana slices.
Bake in the oven for 40-50 min or until a toothpick comes out clean.
Once baked allow to cool on a cooling rack and gently remove from loaf tin.
Once cooled cut into thick slices to enjoy plain or with vegan butter and a cup of coffee.
