These vegan oat cookies are so easy to make, not to mention they are delicous and the perfect chewy consistency !
makes 12 large cookies
2 vegan “eggs” (egg replacer or a flax egg)
1/2 cup of vegan butter (or margarine, works with both)
1 cup brown sugar
2 teaspoons vanilla essence
1 cup cake flour
2 cups rolled oats (can add up to 1/2 cup more)
1 teaspoon baking powder
1 teaspoon cinnamon
Preheat the oven to 180°c and line a baking sheet
In a bowl mix the eggs according to instructions on the packet or for flax egg (1 “egg” = 1 tbsp flax + 2.5 tbsp water)
Cream the butter and the sugar a bowl until light and fluffy and then add the vanilla essence and the “eggs“
In another bowl add the dry ingredients (flour, cinnamon and baking soda)
Add the dry ingredients to the wet ingredients and combine.
Add the oats and stir with a wooden spoon (the dough should be thick)
Roll into ping pong size balls.
Bake for 10 min until golden.
Remove from the oven and allow to cool then transfer to a cooking rack to cool further.
