Caramel coconut date balls

My all time favourite on-the-go snack: date balls ! This simple recipe is amazing to make at the beginning of the week and store the in a jar in the fridge for the perfect snack later in the week.


INGREDIENTS

1 1/2 cups pitted dates ⁣

1 cup coconut flakes ⁣

1 cup walnuts ⁣

1 tablespoon nut butter (I used cashew butter) ⁣

3 teaspoons chia seeds ⁣

a few drops of caramel essence (optional) ⁣

Add all the ingredients to a food processor and blend until it forms a thick paste.

Roll into balls and roll each ball in some desiccated coconut. ⁣

Store in an air tight container.
