3 sliced and grilled shiitake mushrooms
1 serving of vermicelli rice noodles
1/4 cucumber in ribbons
1 grated carrot
2 radishes sliced thinly
1/2 a red red bell pepper sliced
5-10 sugar snap peas
1 tbsp peanut butter
1 teaspoon sriracha (more or less depending on your spice liking)
1 tbsp soy sauce
In a bowl add the vermicelli noodles and pour over some boiling water, allow to sit until soft (around 5 min) and then drain and run under cold water.
Transfer the noodles to a bowl.
Prepare the rest of the ingredients and add over the noodles
To make the sauce mix the peanut butter, sriracha and soy sauce in a bowl and add over the top of the noodles
Mix everything together and enjoy.
