3 INGREDIENT VEGAN ZUCCHINI SOUP

Spent the weekend meal prepping, creating and shooting recipes for this week and I can’t wait to share them all. I’ve been loving baby marrows lately because they’re so versatile. This EASY 3 INGREDIENT baby marrow (zucchini) soup has got to be a favourite of mine.

MAKES: PREP TIME: COOK TIME:
4-6 servings 10 minutes 20 minutes
FOR THE SOUP:
800g baby marrows, peeled and roughy chopped
1 cup raw cashews
3 1/2 cups of vegan vegetable stock
(Salt and pepper)
Optional: 1 tbsp of vegan butter
MAKE THE SOUP:
1. Add the baby marrows, cashews and veg stock to a pot and bring to a boil (add some salt and pepper to taste.)
2. Turn down and allow to simmer (for 20 minutes) until the cashews are soft and tender.
3. Transfer straight to a high speed blender and blend until smooth.
4. Serve with some fresh bread and enjoy !
